Description
Green and white tea, pear, rose, mint and jasmine
To tell you the truth, I didn’t know Djoya…Well, not directly. But I would like to tell you a little bit about him to my children…to his great-grandchildren…
Born in 1900 in Istanbul, Djoya, whose first name means jewels in old Spanish, had the grace that women who liked to dance and the desire for freedom had at that time.
As her blue eyes, which contained the sky of the entire Mediterranean, passed by, the gentlemen were turning around, holding their hands to their hats and hoping for a smile…
This smile, Djoya had it 60 years later, when she regularly took the train to pay visit her daughter and granddaughters in Brittany…
With her, she always brought in her suitcase, all the sweets of her lost country that she could still find in rare grocers in the capital.
All these treasures made the opening of her suitcase a ritual of delicious happiness for her granddaughters who were amazed by this culinary and cultural journey full of scents…
With the grace of a ballerina, she unwrapped her perfumed presents on the table, and in a ballet of flavors transmitted to the two attentive children a part of their heritage… And here are Loukoums, Halva, Rose jam and other southern sweets…
Many years later, I married one of the two granddaughters waiting for the opening of the suitcase of delicacies… She hasn’t lost her taste for the good things and for sharing them as Djoya taught her. It is even said that she founded a tea house somewhere in Brittany…
In memory of Djoya, let’s open together a suitcase of fine flavors and under her amused look, let’s discover again the pleasures of fruits and flowers, Pear and Rose which support a delicate alliance of Mint and Jasmine for this green and white tea recipe…
Also, when you taste one of our teas, keep a little thought for Djoya, because it is a little thanks to her…
